This a fantastic departure from the typical burgers and brats we often turn to when grilling out.  It is easy to prepare, the ingredients are simple, and being that the main course contains giant shrimp... it is special, too.  The entire menu can be prepared ahead of time, then put on the grill all at the same time (5 minutes!) before dinner.  For the entire Easy Summer Grilling menu, click here!

Tomato & Fresh Mozzarella Bruschetta
Herb Marinated Grilled Jumbo Shrimp
Grilled Asparagus
Grilled Corn on the Cob
Grilled Peaches with Ice Cream

Herb Marinated Shrimp 
serves 3-4 (I like to serve 3 to 4 shrimp per person)

1 lemon, juiced
1/4 cup of fresh basil, chopped
4 cloves of garlic, minced
2 tablespoons of dijon
1 teaspoon of dry mustard
1 teaspoon of sea salt
1 teaspoon of pepper
1/2 cup of olive oil
1 1/2 pound of jumbo shrimp (these are 8 per pound)

Mix together the lemon juice, basil, garlic, dijon, mustard, salt and pepper.


Add in olive oil.
   

Whisk together.


Add peeled shrimp.  Marinate for an hour or more (if you have time).  Drizzle the corn and asparagus with olive oil, salt and pepper just before grilling.

 

Put the shrimp on first, followed by the corn and asparagus.  Turn the shrimp, corn and asparagus after 3 minutes.


Take the asparagus off first, then the corn, and finally the shrimp.





Dinner, laptop style.
