Fireside Beef Bourguignon & S'mores
with Homemade Heart Marshmallows

We got engaged two (short!) years ago on a ski vacation in Aspen.  It was such a romantic vacation - we had cozy little dinners at bistros in the village, spent the days skiing and even a real horse drawn sleigh-ride through the woods on the back side of Aspen Mountain.

One of my favorite parts of the trip was our fireside lunch at Cloud 9 Bistro.  It is a tiny ski-in little cabin halfway down Aspen Highlands Mountain with only a couple of tables and a roaring fire.  Can you imagine anything better than skiing into a rustic cabin and enjoying steaming hot chocolate and French stew in front of a roaring fire?  I'm getting warm fuzzies just thinking about it...  Here is a link to the post about our entire trip to Aspen.  Warning : pre-quality camera photos.

This menu of Beef Bourguignon & S'mores reminds me of that little lunch at Cloud 9 - except it is better because you can enjoy this dinner from the comfort of your own fireplace.  The best part about this menu is that you only have to make two things - the stew and marshmallows.  And really, you don't even have to make the marshmallows - so many bakeries are making them now, or you can rely on the ole' bag from the grocery store.  Either way they will be delicious.
