I made "homemade" bread from frozen bread dough.  The guys (including my future husband, who I hadn't started dating yet...) went crazy.  They said they had never tasted anything so amazing - it was soft, moist, light, chewy... they went on and on.  Mike still talks about that bread to this day - maybe that was what attracted him to me! Sadly, I don't think I've ever made it for him since that night - oops!  Guess I'll have to put that on our list.  His birthday is coming up!</div><div class="" style="clear: both; text-align: center;"><br /></div><div class="" style="clear: both; text-align: center;">The point to that story (sorry...) is that I believe the appeal of "homemade" bread is not the fact that it is made "at home," but that it is fresh baked.  I use that very same frozen bread dough to make cinnamon rolls that taste, look and smell just like homemade dough - but the hard part is already done for me!  All I have to do is thaw the dough, roll it out, butter cinnamon and sugar, rise & bake.  It really takes no time at all - it just has to be done the night before to allow for the rolls to rise. margin-right: 1em;"><img border="0" height="480" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg7Hw-HYLCPQT-D-09AWvYG5Y_TtWaUiQaPUZlxtfSViSbupOLCCORzv1irgDd5cjmif6onQb0_LQ5N-NkZIkdFjgLInYhwLS9OWwSFOcnrglcYszJNIWhJU5UpCHCthxmCLNt60wBGFLAi/s640/IMG_5401.JPG" width="640" /></a><br />Breakfast is tricky for all of us, right?  Or maybe you're super Mom/Wife and are flipping pancakes and making egg white omlets at 7 AM every morning.  Good for you.  More realistic breakfasts (for the rest of us) usually consists of cereal or something that comes out of a toaster.   <br /><br />If you're using my Back-to-School Guide, your family has been enjoying a healthy and fulfilling Breakfast Strata all week for breakfast... but now it is Friday.  You want to make a little something special for your kids to take for breakfast... but you only have 10 minutes.  If you have puff pastry in the freezer*, you're in luck.  These cinnamon roll-ups are a similar technique to my <a href="http://jennysteffens.blogspot.com/2010/09/recipes-chocolate-cinnamon-pecan-sticky.html">pecan cinnamon rolls</a>, but you can make them in no time.<br /><a name="more"></a><br /><br />They are buttery and flaky with cinnamon and sugar, drizzled with icing... and they are homemade.  Your kids/family/husband will love them.<br /><br />Not only for breakfast, these are darling enough to serve along coffee at a bridal/baby shower brunch.  They are inexpensive to make.  For about $5 you can make 32 roll-ups.  Try purchasing any treat from a bakery for $5!  <br /><br />*As I mentioned in the Chicken Pot Pie post (say that three times fast...), I always keep puff pastry in the freezer.  I use it for making quick <a href="http://jennysteffens.blogspot.com/2010/12/recipes-entertaining-cocktail-party_10.html">caramelized onion and goat cheese tarts</a>, <a href="http://jennysteffens.blogspot.com/2010/09/recipes-chocolate-cinnamon-pecan-sticky.html">cinnamon pecan sticky buns</a>, and <a href="http://jennysteffens.blogspot.com/2010/06/cocktail-party-light-bite-sized-hors.html">easy appetizers</a>... it was definitely my secret weapon as a caterer and party planner.<br /><br /><div class="separator" style="clear: both; text-align: left;">Don't Forget :  <span style="font-size: small;"><a href="http://jennysteffens.blogspot.com/2011/08/lets-give-back-this-back-to-school.html"><i>Join me in giving back this Back-to-School season! </i></a></span> </div><br /><br /><br /><span style="font-size: large;"><a href="http://www.jennysteffens.com/backtoschool.html">Back-to-School Guide</a> : </span><br /><i><span style="font-size: large;">Quick Cinnamon Roll-Ups</span></i><br /><br /><br />1 sheet of puff pastry, frozen or thawed<br />2 tablespoons of butter, melted<br />1/4 tablespoons of brown sugar<br />2 tablespoons of sugar<br />1 tablespoon of cinnamon<br /><br />1/2 cup of powdered sugar<br />2 tablespoons of milk (+ more for thinning, if necessary)<br /><br />Cut puff pastry into triangles - any size, big-small, just stay consistent.  Brush with melted butter.  Sprinkle with brown sugar, granulated sugar and cinnamon.  Roll up.  Place on a baking sheet.  Place under a high broiler for 3-5 minutes (depending on the size of your triangles).  Watch them carefully.  When they've puffed and just begin to brown on the corners, they're ready.  Meanwhile, stir together powdered sugar and milk to make an easy icing.  When you remove the roll-ups from the oven, drizzle with icing glaze.<br /><br /><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhix6v836PHyqFTCAF5yA4D3AkZoWjLKiWyhdz_BtG0jxwiYCyy6KKunuhNbS3c31nNfO0R3SWvHtGiwjPMrOLCxyBRnaVLGehcSSDeWo4oIUuaLCDJV9aewZOfSkojSHh8QPW4DRNkWmKV/s1600/IMG_5367.JPG" style="margin-left: 1em; <div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhDifcVQKbOcAjawL2E1ODoHsN9CtoGWpNnJocs_GlSaMXgsJk1P_nvOuIHqj6LmTIjyWcBzmM6uMfZaYvELX1d-dcSvpdFbwLpFRWrXUoij9oaQKoOnNABrQ7H7W4eDAywdMFKKZYHdXpm/s1600/IMG_2740.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="480" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhDifcVQKbOcAjawL2E1ODoHsN9CtoGWpNnJocs_GlSaMXgsJk1P_nvOuIHqj6LmTIjyWcBzmM6uMfZaYvELX1d-dcSvpdFbwLpFRWrXUoij9oaQKoOnNABrQ7H7W4eDAywdMFKKZYHdXpm/s640/IMG_2740.JPG" width="640" /></a></div><br />My Mom is famous for her cinnamon rolls - she makes them, it seems, on a weekly basis.  The are soft, buttery, gooey and sweet.  They are great to make ahead of time in large batches and freeze for gifts - perfect for hostess gifts or impromptu holiday brunches.<br /><br />Mom's Homemade Cinnamon Rolls<br /><br />2 packages of active dry yeast<br />1 tsp. of sugar<br />1 cup of warm water<br />.......<br />1 can of evaporated milk<br />2/3 cup of melted butter<br />3/4 cup of sugar<br />4 tsp salt<br />6-8 cups of flour<br />.....<br />1/2 stick of softened butter<br />1 1/2 cups of sugar<br />3 tablespoons of cinnamon<br /><br />In a small bowl, combine yeast, sugar and warm water.  Let the yeast activate.<br /><br />In the bowl of a Kitchen Aid mixer fitted with the dough hook, combine milk, butter, sugar, salt and flour (starting with 6 cups and add more, if necessary).  Stir in yeast mixture.  "Kneed" dough with dough hook on med-low for 5-8 minutes, adding flour as necessary, until it forms smooth elastic dough.  You may need to turn it out onto a floured board and kneed by hand until it is completely smooth. <br /><br />In a large bowl greased with vegetable oil, place the dough in the bowl and cover with a warm damp kitchen towel.  Let the dough rest and rise for 2 hours in a warm place until it has doubled in size.  Sometimes I'll turn my oven on 250 degrees and let the bowl sit on top of it. <br /><br />After 2 hours, punch the dough down and let it rest for 5 minutes.  Next, turn it out onto a floured surface and roll it into a rectangle (approx. 15" x 20").  Spread it with softened butter, then sprinkle it with the sugar and cinnamon.<br /><br />Roll the dough into a log and cut into 1 1/2 inch slices (that look like a pinwheel).  Place them spiral side down into a buttered baking dish - I like to put them in a pie dish - it makes an easy presentation. <br /><br />Again, let them rise covered with piece of parchment paper sprayed with cooking spray (to keep it from sticking) for about 1 hour.<br /><br />Take off the parchment and bake at 350 degrees for 18-22 minutes until slightly brown on the edges. <br /><br />Cream Cheese Icing<br /><br />4 tablespoons of cream cheese<br />8 tablespoons of butter, softened<br />2 cups of powdered sugar<br /><br />In the Kitchen Aid fitted with a paddle attachment, whip cream cheese, butter and powdered sugar until smooth.  Add a little water, if necessary, to get desired consistency.
