It is Back to School Season!  I've put together a Back to School Guide that will make the beginning of the school year more fun (and manageable!).  These make ahead dinners, easy breakfast recipes and simple desserts will get an A+ from your kids... and will pass the parent taste test, too!

 

Breakfast is sometimes far from our mind as we hit the snooze button 3 times in a row.  Our good intentions of getting up early have failed again.  Breakfast is usually was gets the cut when your getting ready routine is cut 15 minutes short.  Being prepared for a healthy last minute breakfast option can make the world of difference in your day - and that of your family's.

For Back-to-School Season, this breakfast strata is a great solution to having a well balanced breakfast ready to go at a moments noticed - for at least a couple of days in a row.  It is a great recipe to make on Sunday afternoon, bake Sunday night, and have ready to go for breakfast in the morning.  Depending on how much you make and how many you're feeding, this breakfast strata can take you through Wednesday or Thursday morning.


Most of the time we think of Stratas or Breakfast Casseroles as rich quiche like dishes served at brunch.  My healthier (and easier) version is great for during the week breakfasts - at home on a plate or to-go wrapped in a tortilla or on toast.  Feel free to make it as healthy as you'd like - swap the sausage for ham or veggies, go without cheese and you'll hardly notice.  Oh, and it is still a great recipe to make for a brunch on the weekend.   


Back to School Guide :
Breakfast Strata

8 eggs
1 1/2 cups of milk 
1 teaspoon of salt
1/2 teaspoon of pepper
8 pieces of bread, cut in half crusts on
2 cups of cheddar cheese
1 pound of sausage, cooked and crumbled

In a bowl, whisk together eggs, milk, salt and pepper.  In a 9x9 baking dish or a pie dish, put one layer of bread on the bottom.  Crumble 1/2 of the sausage over the bread.  Sprinkle half of the cheese over the sausage.  Pour half of the egg mixture over bread, sausage and cheese.  Repeat layer with bread, sausage, egg mixture and finish with cheese.  Cover with foil and refrigerate for at least 2 hours - overnight.  Bake at 375 degrees for 50 minutes - 1 hour, until the top has puffed and the egg mixture is no longer running.


Fit triangles of bread into the dish.

 Pour egg mixture over bread, then top with cheese.
